"This is out of a really old Weight Watchers Magazine. Most baked beans use dried beans but this uses canned beans. It saves you hours of cooking time. This is so weird... it says it doesn't include the beans but if you look at the details it does...the recipe in the magazine shows 148 cal, Pro 7.2g, fat 0.6, Carbs 30g, Fib 3.5g"

  • cooking spray
  • 1 cup onion, chopped
  • 1 jalapeno pepper, seeded and mince
  • 1 (15 1/2 ounce) can great northern beans, drained
  • 1 (16 ounce) can pinto beans, drained
  • 12 cup ketchup
  • 12 cup water
  • 3 tablespoons molasses
  • 2 tablespoons yellow mustard
  • 1 teaspoon chili powder
  • 12 teaspoon liquid smoke

directions

  • Preheat oven to 350°.
  • Coat a small nonstick skillet with cooking spray, and place over medium-high heat until hot.
  • Add onion and jalapeno pepper; saute 2 minutes or until tender.
  • Combine onion mixture, beans, and remaining ingredients in a large bowl; stir well.
  • Spoon bean mixture into a 2-quart casserole coated with cooking spray.
  • Bake, uncovered, at 350° for 1 hour or until thick and bubbly.

  1. I have them in the oven now. I calculated and it is 4 Smartpoints per 1/2 cup..so 1 cup=8 pts. Thanks for posting recipe!

  2. I used two cans of pork and beans (undrained) since I didn't have the other beans and baked for 45 minutes. Turned out very well for being much lower in sugar than the regular beans that I make. Nice side dish for the weight watchers plan. Thanks for posting!

  3. Nowadays I usually make baked beans this way, though with a few different ingredients! I particularly enjoyed the use of the jalapeno pepper (surprise, surprise!) & the liquid smoke ~ Made for a nice change for us! Thanks for sharing the recipe! [Tagged & made in Please Review My Recipe]

  4. We thought this recipe was good. This was made to go as a side with hamburgers & corn on the cob. I followed the recipe exactly and the only thing I noticed was that the beans came out a little dry. Perhaps I baked them too long. Maybe next time I will make a little more sauce. Oh I also put in a bit of sliced canadian ham. This probably ruined the weight watchers part of it, but it did add some extra oomph to the beans. Thanks for posting the recipe. We really enjoyed it.

  5. These were very good. I left the seeds in the jalapeno b/c we love spice. I thought it was a little onion heavy, but I am not a big onion fan. Next time, I will reduce onion and try dijon mustard instead of yellow. Thanks!
